Ingredients:
– 2 cups almond flour
– 1/2 teaspoon baking soda
– 1/4 teaspoon salt
– 3 large eggs
– 1/3 cup Grain2Grind honey
– 1/4 cup Grain2Grind cold-pressed coconut oil
– 1 teaspoon vanilla extract
– 1 tablespoon lemon juice (optional, for a bit of zest)
Instructions:
- Preheat the Oven: Preheat your oven to 350°F (175°C). Grease an 8-inch round cake pan or line it with parchment paper.
- Mix Dry Ingredients: In a large bowl, mix together the almond flour, baking soda, and salt.
- Combine Wet Ingredients: In another bowl, whisk the eggs. Add the honey, melted G2G coconut oil, and vanilla extract. Mix well until all the ingredients are fully combined. If you’re using lemon juice, add it to this mixture.
- Combine Wet and Dry Mixtures: Pour the wet ingredients into the bowl with the dry ingredients. Stir until you get a smooth batter.
- Pour Batter into Pan: Pour the batter into the prepared cake pan and spread it evenly.
- Bake: Place the pan in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
