When it comes to food, we prefer everything fresh. Fresh fruits, fresh vegetables and everything freshly cooked. Why? Because there’s just that different taste and wholesomeness to all things fresh. Also, it is fresh food that gives you the best health benefits. Stale food on the other hand is a breeding ground for bacteria, fungi, etc leading to health hazards. Therefore, it’s but natural that Rotis, a large part of our daily diet, are also preferred to eaten just when they’re made. Fresh off the tava, slathered with a bit of ghee; the flavor, texture and satisfaction of having a warm fresh roti is just something else!
But to make fresh rotis, the core ingredient, the atta or flour, also needs to be fresh. Yet, have you ever thought if the packaged flour you get from the store is truly fresh? Given the fast-paced life, most people opt for store-bought atta for its availability and affordability. Huge packets of atta come fancily packed at cheap rates with the words ‘whole wheat chakki-fresh’ stamped on it. However, have you ever wondered for how long that chakki fresh atta may have been lying on the shelf?
Given the intact bran and germ on the grain, whole wheat flour can only last up to about 1 to 3 months. Even then most packaged atta labels do not have a manufacturing date to help you ascertain when their ‘best by’ date has passed. Not just this, most common atta brands add all-purpose flour to whole wheat flour to increase shelf-life. Also, since common atta brands are commercially milled in roller mills and lose the bran and the germ, they are pumped with additives like ascorbic acid, L-cysteine, bromate, etc. which can prove to be toxic or carcinogenic.
How then is your atta truly fresh or healthy?
